Thai Salad with Lime Cilantro Dressing

So this is my version of Thai salad with lime cilantro dressing that has become my favorite lately.
Salad mix
1 bag of cole slaw mix (or your lettuce preference)
2 Persian cucumbers ( julienne)
1 red bell pepper (julienne)
2 green onions (julienne-green and white part)
1/2 bunch of cilantro chopped
Toss the above together.
Dressing: (measurements approximate, sorry I eyeball everything)
Juice of 2 limes
2 tablespoons sesame oil
1/4 cup white vinegar (trying with red wine vinegar next time)
1/3 cup soy sauce
1.5 tablespoons creamy peanut butter
2 tablespoons toasted sesame seeds (optional)
1 teaspoon crushed red pepper (optional)
Whisk dressing until PB is no longer clumpy. Serve with grilled shrimp or chicken or beef. This should serve 4 very decent portions. I've so far only made it with shrimp since it's the quickest to cook.
