Pork Chops

This is embarrassingly simple, as in 'I almost didn't post it." Basically I ran out of time to make dinner last night but to my surprise, my kids (especially my daughter who had seconds) gobbled this EASY dish right up. I just baked some sweet potato fries as a side. Probably should have added a green but it didn't happen and the kids survived.
-Pork chops
-Salt/Pepper to taste
-1/3 cup or so Apricot preserve
-1-2 tsps ginger. I used these little life changers from Trader Joe's: http://mydorot.com/
-Oil of choice
1. Season both sides of meat.
2. Heat oil in a pan on medium heat
3. Cook each side of the meat for 4 minutes or so
4. Whisk preserves and ginger.
5. Pour half the preserve blend on top of the chop until the preserves that inevitably slide into the pan start to bubble
6. Flip the chop, repeat with the rest of the preserves.
7. Plate those chops with your side and pour yourself a drink. Dinner in under 20 minutes
