Chicken Tortilla Soup

Easy Chicken Tortilla Soup




This easy soup is warm and hearty on an autumn day and yet it has a bit of lightness from the fresh squeeze of lime. I made this with things I had on hand at the time and it took less than 20 minutes to get dinner on the table. 

Easy Chicken Tortilla Soup
1 to 1 1/2 cups cooked chopped chicken
1/4 onion chopped
1 clove garlic minced
2 tbs butter
2 tbs flour
3 1/2 cups water
I packet dry noodle soup mix
1/2 can fire roasted tomatoes
1 small can green chilies
1 tsp oregano
1/2 tsp chili powder
1/2 tsp cumin
Dash of cyanne pepper

Possible Garnishes
Diced avocado
Lime wedges
Crushed tortilla chips
Shredded cheese
Sour cream
Cilantro
Chopped onion
 
In large pan melt butter and sauté onion and garlic until translucent. Sprinkle with flour and herbs and let cook for a minute. Add water, tomatoes, green chillies, dry soup mix and cooked and chopped chicken. Let come to a boil and cook for 10 min. 

Serve with your choice of garnishes. I enjoy a little lime, cheese, some chips and sour cream.
