Last night I made salmon which has become my kids favorite recently. I have had pretty picky eaters but they cant seem to get enough of this recipe. I don't measure exactly anymore, I just eyeball it and adjust to taste. I marinade the salmon with oil oil, soy sauce, lemon juice (my guess for the first three ingredients and about 4: 6-8 ounce filets I use about a quarter cup, maybe less oil) minced garlic, salt, pepper, cumin, chili powder and chopped rosemary and cilantro. I usually leave it in the marinade for an hour and then broil on hi for 10 minutes or so or put it on the grill. This will sear the edges and crisp them up but leave the middle nice and moist. I also roasted brussel sprouts. I slice them in half or quarters depending on size, toss in olive oil or avocado oil, garlic salt and pepper and bake at 375 for about 30-45 minutes. They will be done when the outer edges brown and crisp. Hope you all like this too!!!
