Portabella Fries

Any mushroom lovers out there?? These Portabella Fries were delish! You can do it with zucchini too  super easy and pretty healthy (they're baked not fried).
Portabella Fries
Wipe dirt off with damp cloth and scrape out gills of mushroom. Slice into 1/4" strips.
Set up 3 bowls, 1 with flour, 1 with a beaten egg and 1 with panko bread crumbs mixed with finely chopped parsley.
Preheat oven to 425 degrees(f) and line a baking sheet with parchment paper.
Dredge portabella strips into flour, then egg, then coat well with panko and set on baking sheet. Sprinkle with salt.
Bake for 8-10 minutes turning once in between.
Fries are crispy on the outside with a tender center and amazingly delicious dipped in ranch!
