Pineapple Black Bean Avocado Salsa
Pictured here with grilled swordfish, this salsa would be great as a chip dip or to top your favorite seafood or chicken. The idea started with pineapple and I just added what I had on hand, black beans, avocado, spinach, lemon zest and juice, red onion, and a splash of Trader Joes salsa verde.
Grill 1 slice of pineapple, cut up into chunks and put in food chopper with about 1tablespoon red onion, 1 tablespoon lemon juice, 1teaspoon lemon zest, a handful of spinach, 1/2 an avocado and about 2 tablespoons Trader Joes Salsa Verde. Chop until desired texture, add salt, pepper, and 1/4 cup black beans and stir.
Healthful and flavorful.
