super simple viniagrette (italian? greek?):
1 T dijon
1-2 t of minced garlic (if you happen to have minced garlic in the fridge- fresh garlic will be too spicy, so if you use it, use a teeny amount)
1/4 c of vinegar - I like the white balsamic from TJ's- but any will do...or lemon juice
2 t/ each of what ever dried herbs you like- oregano, basil, thyme (if you have fresh, even better)
whisk together with fork and drizzle in 1/2 cup of EVOO to emulsify
SO much better than the crap at the market...no sugar, no preservatives...
